iPod Touch constantly "backing up"

Ever since I updated my Touch with the 2.0 software update, every time I connect it to my Mac for syncing, it tells me the Touch is being "backed up" on the computer, and every time I see the free memory on my computer hard drive go down by significant numbers. Any idea what is actually being "backed-up" rather than simply syncing and where these so-called backup files are actually located on the computer hard drive ? Any way to stop this behaviour ?

Reclaim that space by checking iTunes Pref and deleting a backup from the list

In Preferences select Syncing
You should find all the back ups listed

select and remove.. I wonder how this backup is used. During restore?
