I have one critique of your suggestions. As a professional photographer/videographer and editor I have a real issue with spending $300+ on production gear, but being unwilling to spend anything on post. (why is it that everyone is willing to spend money on production, but not post?) Photoshop is expensive, but Aperture is VERY reasonably priced at $200. iPhoto does do a decent job, but Aperture is definitely worth the extra $200 for post.

The main purpose of the video was to demonstrate some editing tips using a low-level program that everyone would probably own already -- and for that, iPhoto was the best fit. I agree Aperture is a much better tool, and for anyone serious about this stuff, it (or Lightroom or Elements or Photoshop) are probably well worth the money. (I own an older version of Aperture, but haven't upgraded it yet; I may someday...). If I dove more often, I'd probably find the money to get that done. But as it stands now, with once-a-year (maybe) dive trips, I find iPhoto does a pretty good job for what I need.
