HOW COULD YOU NOT HAVE MENTIONED VLINGO??!
It's probably one of the most versatile and successful voice dialers in the App store

Melodis Voice Dialer is Awesome!!! I am surprised it isn't on your list.
1. It works unbelievably well.
2. It's free.
3. See #1 and #2
This is the App that I show every other iPhone owner.

I have never put a more unstable application on my iPhone than Cactus dialer.
I've been using a free version of Say Who (does it still exist) - and have been relatively happy with it.

Definitely try out Melodis Voice Dialer. I was using Say Who and it was okay, but Melodis works much and functions as a general contacts search tool. Oh, and like chefmitch said - IT'S FREE.
I can't imagine paying for a voice dialer when MVD works as well as it does.

I also use Melodis and am very happy with it. Accurate, fast, versatile and free. Even though you do have to push a button to start the app, the button you push and hold to speak is large enuf at the top of the screen that I don't have to look at the phone to voice search once the app is started. Only wish it would close after finishing the call. Used SayWho and Melodis is faster and more accurate IMHO.

I have been using iVoiceDialIt as well. They have a newer version coming out to address special dialing characters bug, and the timing of when you can speak. I wait about 1/2 second after the beep before talking. You don't even have to look at the phone, with one hand you can start iVoiceDialIt, then just shake it once to start the listening mode and place to ear and say your trained contact name. I found it to be faster and safer to use than the rest.

Two bits of input for ATT's VoiceDial - one not so positive and one absolutely great.
Not so good, though the "contacts" are portable from the voice commands, any calls via VD end up using wireless minutes - M2M calls included. All calls ported via VD count against a plan.
Buried deep in ATT's site, VoiceDial's fee can be waived for persons that could benefit from the service - a very cool touch for persons that need assistance when making calls.
All of the applications pale in comparison to MS's Voice Command. An old version on an HP iPaq I still use for solitare (over 3 years old) beats any of these for ease of use, even on an underpowered old WinMo PDA (which also has stereo BT). Sigh.

Here's another vote for Melodis. I have not tried all the dialers in the review, but I did pay for Say Who Pro and, while not a bad application, Melodis works better for me and you can't beat the price.

Voice Dial apps for the iPhone are still in 1.0 phase. With more advancements coming to iPhone hardware and some SDK features, we can expect iPhone voice recognition 2.0 in 2009 that would improve the interface. I blogged about this review and some more at iphonedev.in .

If you’re expecting voice dialers to let you make hands-free calls while you’re driving, you’ll be disappointed. Thanks to limitations in Apple’s iPhone software for developers, none of them fully support add-on Bluetooth headsets or car kits.

Get a BlackBerry...

Yeah right, get an inferior phone just because voice dialing is not complete yet. And I suppose you'll suggest we also accept Windows instead of a Mac because the Mac doesn't have a Print Screen button?

I personally use VoiceThis Dialer and love it. I would never take the risk of having all my private data stored on any of the "free" voice dialers servers (voicebox, say who, melodis, and vlingo). They say they dont do anyting with it, but how else are they going to make money.....
VoiceThis doesnt have any access to contact data as it runs all on the device, just like fonix, but its only 99 cents compared to $10. Just as accurate as say who and at least 3-4 times faster.
