The best Mac games of all time

I agree, Dark Castle, Crystal Quest, Marathon, Shufflepuck Cafe, Spectre, and Prince of Persia were games I played and enjoyed over and over.
Four games that you haven't mentioned:
1. The Manhole, the original game made with Hypercard, by the same people that made Myst. Magical game! find it if you can. They also made Dr. Suedo, another magical game.
2. Dr. Quandry, the best puzzle education game I've ever seen
3. Continuum, ha, don't remember that do you? sort of a pre- lunar lander but much more fun
4. The very first real game for the Mac, (not counting the Maze game that came as part of the on screen manual to teach how to use the mouse) was Through the Looking Glass. This was an incredible game that was mostly chess, but the pieces which were based on Alice in Wonderland actually fought, and I think the battle was not a forgone conclusion, so sometimes a pawn could beat a stronger piece. Also, it was not a turn based game, so Alice was threatened by all the pieces at any time. Great game.

For all you Marathon Junkies out there who say they want Marathon for Mac OS X: Have you not seen the Aleph One project???!!! Aleph One is the Open Source project bringing Marathon to Mac OS X, Linux, and Windows after Bungie released the Marathon game engine source code as public domain. There is also going to be a port to the XBOX as well. This project has taken Marathon from what Bungie created and made it more versatile and expandable than ever. Also, right before Bungie was overtaken by Micro$oft because they wanted the Halo project, Bungie released the Marathon 1, 2 and Infinity scenarios as public domain. They have been ported properly over to the Aleph One engine and some of the graphics have been cleaned up even more than before. Also, almost all the really good third party scenarios that appeared after Bungie released Forge and Anvil with Infinity, have also been ported over to Aleph One.
You would be surprised to learn that some people out there are still developing scenarios for the Marathon Universe. They are not being made as much as they were after Infinity was released, but they are still being made. The most recent scenario project was completed as recently as Feb 2008. The most recent release of the game engine was as recent as Dec 2008.

I've enjoyed most of the games on the Mac, and I'm still drawn to Tomb Raider (Indian Jones) using simple keyboard and mouse commands.
My biggest disappointment on the Mac OS is the lack of a good Flight Simulator combined with airplane controls (joy stick, rudder). A better choice of Graphics cards would be very welcome as well.
I'm a pilot and I always end-up using a PC with Windows to run flight simulators and arcade games, primarily because of the easier configuration of game controllers and multiple screens.
The dedicated game consoles may be better for playing games, but not flight simulators. And they still lack the resolution and sheer speed of a real computer running the game.

To me if a game runs natively on the Mac, it's a "Mac game". To corodon off a raft of fantastic games with arbitrary criteria seems foolish and just a bit... petulant? Blindered? Something like that.
That said, my top five would be:
Deus Ex - Best game ever. A shooter with a brain and replayable over and over again.
The Fools Errand - Brilliant and the best puzzle game ever (With apologies to Myst which was a little to 'leisurely' for my liking, but stunning beyond words). There's also a sequel in the works.
Oni - An FPS and a fighting game. I'd give my right arm for a sequel to this one.
American McGee's Alice - One of the most imagninitive "shooters" I've ever seen and fabulous graphics.
Red Faction - Probably unlike most, I actually had more fun playing this than I had playing Halo (Not to say that Halo wasn't fun).

Oni was fun -- it remains in my mind a milestone for me, personally, as it was the feature of my first Game Room column for Macworld, back in 2001. ;)
That's not to say the game was flawless, though. Bungie West decided to use architects to design the levels for the game. It was an interesting experiment, but it failed -- the levels were cavernous and sparsely populated. Turns out that level design isn't something that necessarily runs completely consistent with architectural design.
