Well, I have a suggestion, gratuitous as it may be...
I'd think it'd be cool (in a totally eye candy way, mind you) if Apple added Cover Flow for movies, TV shows, and video podcasts. They have it in iTunes, why not on the iPhone or iPod touch? When you tap Videos and rotate into Landscape, you'd see all your videos there.
Alright, I admit that it's a very rare occasion that I'll have video on my phone, but still, I think it'd be nice to look at.

I own an iPod Touch rather than an iPhone, but the concept is the same. Actually, more so since it's a "bona fide" iPod.
1. A way to change/pause songs without having to unlock the device first; not necessarily shuffle them either.
2. Create a better way to add playlists. For example, I have a lot of smart playlists on my Mac but, having limited room on my iPod, I have to decide which songs to import. So, I have two options: manually add the songs I want to a custom playlist and lose the features of smart playlists, or add only the playlists I want but manually uncheck the songs I don't want.
What would be good is a way to make a smart playlists on the iPod itself. That way, I have all the songs I want on it already and don't have to worry about dealing with my whole library.
3. Fix Cover Flow, as others have stated. If I'm in a certain playlist or genre, I'd like to stay within that group rather than have my entire library appear in Cover Flow.
4. For iTunes in general, fix the genre library. Adding a dash doesn't necessarily mean it's a different genre, e.g. hip-hop vs. hip hop.
iTunes also needs an easy way to delete entries. I don't need 900 genres or all the misspellings of bands that can develop with wrong metadata.
Also, iTunes tries too hard to be helpful. When I'm typing in a band name, as soon as it finds something similar it immediately populates the field. If I mistype it doesn't necessarily let me fix it easily, e.g. a misplaced capital letter.
5. Let me edit songs on my iPod, rather forcing me to do it on my Mac. Changing metadata, and especially deleting songs, is a long easier when I'm actually listening to the songs rather than trying to remember to do it when I get home.
Plus, with the ability to download directly from the iTunes store, being able to remove songs from the iPod's library can be pretty valuable.

Here's how you can change songs, play/pause while the iPhone/iPod Touch is locked:

? If you haven't already, turn on iPod Controls in Settings -> General -> Home.
? Then while you have the iPhone/iPod Touch locked, double-click the Home button (while the screen is active) and the controls appear at the top of the screen.

Hope that helps! Definitely agree with the rest of your points.

All these sound great I have to say..
As a DJ, I have quite many songs on the iphone.
My issue with the playlists and especially the on the go playlist is how rigid and unfriendly it is.
Many times Im listening to a track on my iphone and wish I could add it to either an existing playlist or just make a new one and place the track there.
Its something about in the moment, Im hearing a cool track I have the urge to add to a specific style playlist..The on the go feature, I have to browse through my titles and add them..With out
really knowing if the songs really fit together..
1. hold down on the song title and get a pop up that lets u A. add to existing playlist or B. add to new playlist.
2. On the Now Playing screen maybe there is a little + sign, with the same feature add to existing playlist or new playlist.
Also I second the ability to turn off coverflow.
It may work for some but not for others.. :)
I thought I was alone in this subject..nice to see there are lots of users with similar issues.
I just wish these would be heard by the right people that can make changes ;)
