Im just checking to see how many iPhone owners, that are using OS 3.0, are having the issue with the icons becoming corrupted.
My experience has not been that "bad". My ebay icon has changed to the icon that is for the zoom camera application. So who else is having the problem?
Below is a pic of my iPhone screen with the corrupted icon. Notice that the eBay icon is not the right one.

This has happened to be as well. After trying several different procedures, this is what works:
1. Delete the icon from your iphone.
2. Power off your iphone.
3. Power on your iphone.
4. Connect your iphone to your pc / mac via usb cable.
5. select programs you just deleted to be copied back to your iphone. Your programs should appear correctly on your iphone now.
I performed this procedure deleting only one program at a time from my iphone, then repeated for the next.
1. Delete the icon from your iphone.
2. Power off your iphone.
3. Power on your iphone.
4. Connect your iphone to your pc / mac via usb cable.
5. select programs you just deleted to be copied back to your iphone. Your programs should appear correctly on your iphone now.

I actually found an even easier way to fix all of your icons.
It was found at the apple support forum, so I send out props to them for the help.
1. Delete one of your applications.
2. Go to the app store and select that application and download it.
3. As soon as the app store sends you back to the app screen and shows it is downloading the app you selected, touch the app icon to pause the download/install.
4. Hold the power button until you get the swipe to shut down.
5. Swipe it and do a regular shutdown.
6. Turn your iPhone back on.
7. Once you have loaded, touch the app to start it downloading again.
8. Once it has downloaded and installed ALL of your apps should now have the correct icons.
