One thing you could do to have white text on a black page in iBooks is to activate the White on Black option within the iPad's Accessibility Settings.
To have this easily available on the fly, make sure you have the 'Triple-click Home' set to the 'Ask' setting. That way you can triple click from within iBooks, select 'Turn White on Black On' and enjoy your reading in the dark without burning your retina's out.
It's not a perfect solution for sure, but until the iBooks app sports an inverse option, it's at least somewhat useful.
