One thing you forgot to mention about the "Printer..." button is that this is where you get access to print to a PostScript file (.ps) for later dropping onto Acrobat Distiller etc. for the most robust files of all.
The real secret to Quark's printing options is spending the time to work out your PRINTER OUTPUT STYLE for each and every printer your have (that means working through every menu and sub-layered menu). Once all that is done, it's a simple couple of steps & pop-ups to output each time, changing just the orientation and whether you need crop marks or no crop marks, or turning off individual plates etc.
It's also a great way to discover if that EPS file you just brought in from Illustrator actually has files set to CMYK or SPOT colour.
Long live Quark.
