...So all the New iMacs do, in fact, support SATA-3.
It's just that Apple builds these particular units with SATA-2 drives, correct?

Correct.
Apple released a firmware update after the new iMac was released. Though this Apple knowledgebase article doesn't state it, we've confirmed that the update does enable SATS-3 support: http://support.apple.com/kb/DL1380

Can you really tell the difference between 50 and 60 frames per second? I assume that for the average user running Internet and some iPhoto/iMovie, this will not make much (if any difference) .
