An app with simple brush controls to check out is Interactive Sketchbook. It is a drawing app that uses simple tools that act specific to the layer you are in. (Such as shading pencils in the tone layer.) Too many brush options makes me spend my time finding the right brush and setting, and then I loose my creative momentum.
