Are iTunes, iPhoto, iMovie, etc., etc., restricted solely to iOS devices?

No.

Your logic doesn't hold.

Besides, iBooks is not a tool (technically speaking), while iBook Author is a tool and is an OSX app... not an iOS app.

No app for it on the Ipad though, is that right? You create on your mac and view on your Ipad. How do you get it to the Ipad?

Oh so this means my iSight taking pictures into iLife and listening to iTunes will clearly all be related only to my iOS devices... oh wait that is completely wrong.

I found how to force orientation to LANDSCAPE mode only, but not for PORTRAIT mode. Where is that? Thanks.
