I'm moving my iTunes library as we speak to a new Synology NAS. If I point both my laptop and iMac to this library they should be synced right? Playlists, Apps, etc.?
The second part of this question. If I add something to my library on my iMac, will my laptop automatically add those tracks as well? I would think so since it's the same library but thought I would ask.

I'm actually thinking about buying a NAS for this usage (among others) and I'm interested in the answer of your question... Could somebody tell me if iTunes libraries are automatically synced in both machines doing this way ?

By default, not they will not be synced. When talking about an iTunes library, there are actually two parts...the media folder that contains all the music & videos and an XML file that is basically what tells iTunes is in your library and where that stuff is located (i.e. this is the file that creates the library list of songs/videos in iTunes). So, when one of the Macs adds a new track to the media folder, it will not be automatically be added to the XML file unless both Macs use the same XML file. This is doable...BUT there is a major caveat...when you fire up iTunes, it locks the XML file such that it cannot be used by other Macs. So, even if you have both Macs using the same media folder and the same XML file, only ONE Mac can use the XML file at a time.
