I want to buy an open iphone while in Canada for a month, use it there, then go to UK and use it in UK for six weeks and then go to Spain where I spend most of the year. Any ideas on economical ways of doing this? I will want to send photos and use apps as well as the phone! I have an ipad and a Macbook Pro.

You need to buy an SIM unlocked iPhone from Apple or buy it from a Canadian mobile provider that will provide an unlock. Since you will only be using it in Canada for a month, you are going to pay full price. It looks like the price of an unlocked, 8 GB iPhone 4 in Canada is $549, a 8 GB iPhone 3GS is $375 and $649 (16 GB) and up for the iPhone 4S. These are the prices from the Canadian Online Apple Store in Canadian dollars.
You might be able to buy a used unlocked iPhone while you are there as well. In the US, AT&T has started unlocking iPhones so I imagine there should be many available. AT&T is the only GSM compatible iPhone sold in the US. The Verizon and Sprint iPhone 4S models can also be SIM unlocked but doing so requires the cooperation of the carrier and that might be problematic for a phone you bought used. So if you buy a CDMA compatible iPhone 4S, make sure it is already SIM unlocked. The iPhone 4 CDMA models don't have a SIM so they can't be used off of the CDMA network that they are designed for.

Going economical is completely impossible if you want to buy a sim unlocked version. Unless of course you are ok with 2nd hand stuff. There are plenty of 2nd hand iphones out there
