Sorry, but with "Photos" on iOS you can't sort... or let's just say if you can, it is a very well hidden function or workaround from Aperture or iPhoto on the Mac.
On the other hand, the iOS App that Chris mentioned, "Photo Manager Pro" is everything the name implies.
I have it installed on every photographer's iPhone/iPad that I consult and do tech support for.
Super easy; just as fluid-fast as Photos for viewing; custom arrangement and sorting; star-rating; creation and deletion of Albums;... and the killer function? Sync and manage over Wi-Fi and with no need for iTunes or a USB connection.
You connect to the program on your iOS device over FTP using a free app such as: CyberDuck(Mac/Win) or FileZilla (Mac/Win/Linux)... OR... through your browser of choice.
Create your own directory structure, send the whole thing with one click. Check it out.

Thanks. A couple quick questions, If I have all my photos in Aperture (sorted, labeled, meta-dated, etc., do I have to copy them into Photo Manager Pro or can I maintain them in Aperture? Is Photo Manager Pro two programs one on the Mac and one on the iPad, or does it only run on the iPad. Where does PMP get photos and photo information from?
