I have time machine back ups which I love, but my question regarding iCloud is as follows. If I enable iCloud for my contacts, email and Calendar, and I loose my internet connection, will I also loose access to all my contacts, calendar etc...? I've been looking for this information and I haven't been able to find it.

No, you won't lose your contacts or anything. They are sync'ed to/from the cloud when you are connected, but otherwise they stay in your mac or idevice.

The folder can be found here: <user>/Library/Mobile Documents. You can use them when offline, they will be synched when the connection is restored, and backed up with Time Machine if you have it enabled. Nice to know!
