My wife and I find the new iTunes to be a major PITA. The old one worked perfectly. The new one is not user friendly or at least to these two users. It's like it was designed to be unuser friendly.
So how do I return to the prior version? Is it as simple as using Time Machine?
The new version of Address book (Even though it's been around awhile) is also a PITA. The whole icloud thing is not useful to us as we do not have nor will we ever have a Smartphone. http://vimeo.com/54189727

From what I understand, it is possible, but supposedly it is not just a matter of using Time Machine.
This is supposedly a method that will do it...I have no clue how well it works:

Edit: And I would likely make sure you have a GOOD backup (such as a clone of the boot drive) before you mess with it, if you choose to try it.

Thanks Smax013 for your research. Sorry I took so long to reply, but I was a bit chicken to do something that was beyond my understanding, but it is nice to know that there is always a way.
I finaly found what I was looking for when I bought my wife a new Touch and called Applecare re how to enter stuff.
The helpful guy there told me to go to view/show toolbar and voila the old look back again.
What a relief!
Thanks and have a great holiday season!
