Pre-iTunes 10, playlists would maintain their own shuffle and song repeat settings. Now, iTunes 11 doesn't "play" a playlist any longer but uses a queue of songs sent to "Next Up". So when you shuffle you're only shuffling the queue and not the source playlist.

Kirk, you can use Apple's TextEdit to paste the playlist text, but you must change the document to Plain Text before pasting the list. Simply select "Make Plain Text" from the "Format" menu, then you are good to go.
