Right now to scan a document I have to;
open up 'System Prefs' then
click on 'Print & scan' then
click on 'scan'
then click on 'open Scanner' then
click on 'scanner',
so it is quite the parade. : )
How do I make a shortcut to open the scanner.
Opening the scanner allows me to change the settings such as scale, destination file name etc.

Use any of countless applications that know how to access the scanner directly, including the Image Capture application that's part of the stock OS install and the simple (but perhaps too simple) front end that almost certainly came with your scanner.

Once again Bastion Thanks.
Image capture is perfect. Th printer front end is not useful.
