It largely depends on what the original platform was, and how well the game is optimized for that. Back in the day i'd try Unreal Tournament or Quake 3 Arena on my Dreamcast and come away decidedly unimpressed -- they were better with a keyboard and a mouse.
But my perception changed the first time I played Metroid Prime on my GameCube -- here was a first person shooter that was designed from the ground up to work with the controller it was developed to play with. Since then there have been quite a few other games that work a lot better with game controllers than they do with mice and keyboards, and that's fine.
But one game that I cannot play on the console is Halo. For me it's mouse/keyboard or bust.
