Following up on my own hint (bad form, I know), I have managed to get poster frames working -- but only on certain videos. I can't make it work on any of the video podcasts I tried, nor the TV shows, nor the movies. But on some QuickTime content I imported myself, it works just fine...

iTunes only seems to allow one type of Artwork at a time. You can either set a Poster Frame from the video or have a static image (all TV/Movie files form the iTunes store have a static image like album cover-art.)
To change from one type to the other you need to delete the image in the Artwork tab of the item Info window.
If something has a static image you can add more (front and back of an album, etc.) but if you have a poster frame from the video ther can be only one image at a time (notice the Add button is inactive).
Also if you do try to set the poster image and then delete the static artwork, the file does remember which poster frame you selected.

Hmmmm, when viewing a TV show purchased off the ITMS, my size options are grayed out under the View menu. While the movie's playing, trying to resize the video via command-clicking a number (Command-2, for example) quits the video. Same thing happens with the only other video I have in iTunes, a video podcast. A bug perhaps? /forums/ubbthreads/images/graemlins/confused.gif
