Does anyone know of a way with Apple mail of deferring the transmission of a mail message. I often send emails to myself to remind me of things, and it would be nice to receive a reminder on the day I actually need to do something

I've never known of a way to do this in Apple Mail. Thunderbird used to have an add-on called "SendTools" that let you schedule a send date & time for a message, but it is not available for the current version of T-bird (version 2). It still works with T-bird 1 though.

Why not just set up an appointment in iCal and set it to remind you when you need?

Agreed, iCal's reminders include an email option.

Because I may miss a reminder if I am not near my computer, but I know that I check email at least every hour.
