Classical Music on the iPod and iTunes

I also bought my iPod classic almost exclusively for clasical music. I found this article very enlightening, but I have a question. You speak about changing the kbps from 128 to 160. I couln't find where and how I do it. Your step-by-step instruction will be appreciated.

It took me thirty hours to upload my non-iTunes music up to the cloud... but now my 13,000 piece classical music library is up there and downloadable to my new iPhone. I understand the sound quality issues people have, but I also know that it is possible to lower personal standards to be able to accept more of the music that is out there. I haven't lowered mine completely, but I have relaxed my standards a bit as to take advantage of that much more that is available.
I also have a 160GB iPod that used to hold all of my music, but no longer can. I'd love it if Apple's next version (if they have one) would be able to hold everything I have. The cloud (so far) is neat but it isn't (so far) the same as having all on the Pod. Would be nice to have options.
I have had to make a hobby out of finding the artwork for many if not most of my classical purchases that weren't recorded within the past five years (guessing) or so. It's nice to have an album cover for everything. It's even better when I don't have to and it's just there.
