As far as app crashes are concerned, you will need to downgrade to iTunes 7.7 and stop using 7.7.1. I posted a blog with full instructions and also provided download links to both the Windows & Mac Version of this iTunes.
As far as app syncs, update phone with 2.0.2. I am not sure if my clean setup (ignoring the restore) had anything to do with the fast sync or not. But as I write this, I decided to time both the sync & the backup. The sync just started at 1:21. It's probably going to copy over about a gig or so of new pod casts.
I posted my entire results with screen shots here and speak for themselves.

I had same problem with really long backups. I solved my problem by using Backup Disabler available as shareware from Ian Meyer at Twelve Pin Software. This handy little pogram disables or enables iTunes backups. Backup Disabler
Because it is safer to have iTunes closed when changing it's preferences I use the following procedure.
1) Close iTunes
2) Open Backup Disabler (if not already open).
3) Toggle Backup Disabler to the desired state.
4) Open iTunes
5) Close Backup Disabler (optional)
That way whenever I feel it would be prudent to back up my iPhone I enable back up and let the backup process run overnight.
