One thing I would like it to do is save all the recipients of an email to Address Book and then put them all into a group in Address Book. I am surprised Mail cannot do this.

File a feature request with Apple. While I think what you've suggested is a neat idea, it never occurred to me independently. It's not safe to assume that it occurred to anyone at Apple either.

I've put together an AppleScript, which can be invoked from the scripts menu to do this. It's a rough draft but seems to work in the testing I've done. I'll make it available to anyone who promises to give feedback. Write to uce@splook.com for a copy.
