Well my experience has not been so good. I've used my phone 6 times today since the update and I've had the following:
2 dropped calls
2 calls where I answer (says "connected") but I can't hear the other person and they can't hear me (we both got dead silence)
1 call where things were going good, then suddenly other person could not hear me
1 call where I actually got to have a complete 5 minute conversation with no problems.
So I would tentatively grade this update an "F" given my limited experience.

Here are my experiences:
-My 3G signal is better. I have 2 3G's next to each other right now, one with 2.1 and one with 2.0.2. The 2.0.2 model has no case and is getting 2-3 bars (3G). The 2.1 model is in a case, and gets 5 3G bars, and has better WiFi signal.
-When installing apps, if you click on the icon it pauses the install so you can use do other things
-When I purchased a new app on my phone (the 2.1 one), iTunes immediately downloaded it on my computer, but I haven't been able to recreate this.
-My initial backup took a while, but I think it's because it has new software to backup.
-contacts are faster to search through

I been hearing from many people that the signal is better now ! but I have to admit that I almost haven?t had a 3G signal in my place and now am getting 5 bars, checked by making calls, surf the net and in worst conditions where I almost have no 3G what so ever ..my bar line drops to 4 !! very impressive and happy about it, very fast application response. Safari seems to handle more than 20 pages now !! it use to crash in the past.
If for some resign you still having problems with this firmware I really would recommend to reinstall the firmware by resting the phone back to manufacture settings and upgrade your contents on mobileme and Itunes.

Ok, I was finally able to make a call last night on my way home. I was on the phone with my wife and as i was as i was going through an area i normally have reception the call failed. But it turned out to be her blackberry that just shut off on her. So when we finally got back on the phone i made it home (25min convo) with out it dropping. I even drove through an area where it usually does drop out but it didnt, have full service. Even in my house where i normally have edge with 2 bars, I had 3G with 4 bars, WooHoo!!!! back ups are sooooo much faster too!!!

The only good thing I can say about the update is that it made backing up my iPhone remarkably quicker.
I used to have 3-5 bars of 3G signal all over my house and everywhere I went. Now, my iPhone will ONLY get EDGE (yes, I have "Enable 3G" set to on), if I'm lucky. My iPhone now also shows something that I have never seen before on it, or my previous AT&T phone, something called "No Service."
I thought that this update was supposed to improve the iPhone and not make it worse. Apple.... what have you done to a seemingly perfect device?!?!?
I would gladly go back to longer backups if it meant I could have 3G again.

I think I may be getting stronger reception in marginal areas; at least, it's now sometimes showing a signal at my desk at home, which has not previously been the case either for my iPhone 3G or for my wife's & daughter's Samsung phones.
The FIRST time I put it into my Kensington car cradle after the upgrade, I got the "incompatible charging device" dialog -- even though it's been working perfectly with the phone since I got it. No problem, however, on subsequent inserts, so I suppose it may be a coincidental fluke.
Contacts may be faster... but somehow I've lost all my GROUPS either due to or improbably coincidental with the upgrade. That part does not make me happy.
