convert original 8gb iphone to ipod touch?

I tried to search for the answer but I couldn't find anything. I have an old iPhone 8GB. My wife would like to try it as an iPod Touch. What's the best way to handle this?

Well, if you cancel your cell service on the iPhone it will basically become a touch.

Ok, well I should have been more specific sorry.

Ok I have a iphone 8b. I bought a 1st gen. 16gb. the ATT people swapped the sim cards and then I tethered the new one.

The original 8gb now does the whole connect to Itunes bit when you turn it on. Should I just remove the sim from original 8gb? If I connect it to itunes then it'll just try to register me with att right?
