I would like to be able to delete some files on a weekly basis. Could I write some kind of applescript to do this? If so how? I really have not had much luck with it?

You could write a cron task to do it. However, if you're not comfortable with Unix, that may not be the best course of action.

CronniX - GUI front end to run shell commands or scripts at certain times

Use recommeded version for your version of X.
