Japanese text users on OSX...

Not sure if this is a system problem or a software problem.
I've re-installed both and nothing has changed. So I need help, big time.
This first problem is that I can't read Japanese too well, but I use the Japanese chartacters when needed. So the helper in the system is no good to me.
For those who use the Japanese characters (or perhaps even other languages),
when switching to use "J-char" (Japanese chartacters) usually I'm able to type text directly in the selected box where the cursor is.
BUT, depending on the program, when I start typing a long bar running horizontally at the bottom of my screen pops-up and the charaters start typing out in the bottom bar.
BUT, when I hit the "return" button I only get squares instead of Japanese text.
Now this wasn't a problem until it suddenly happend in Excel. This is not good.
I did re-install Excel and my entire OS on a seperate partition to work around this.
No such luck though.
Somebody's gotta have a solution for this one.
Perhaps something in the preferances?
