Will fontbook allow me to specify a customized list of fonts for a particular application? I have a lot of fonts that are only needed for one application and clutter up font menus in other ones.

you can dedsignate groups and activate/deactivate them as necessary, prior to launchign that app, and after quitting.
so you make the group quark.. then before launching quark, activate it.. after quitting quark you deactivate it. Not exactly waht you are looking for, but it should do.
