DVD writers with the G5

I am new to mac and am planning on getting a G5, and I already have a Sony DRU510a DVD writer. I don't want to get the superdrive. Does replacing an optical drive on a pc similar to the G5? Can you use other drives besides the superdrive with the G5?
Also is more advanced graphics cards only for games or will it help video editing? And will having a separte video capture hard drive besides the original make things run better in Final Cut Pro 4?
