When I type a new e-mail in Entourage something very weird happens: If I type the letter "s" and then hit the space bar, it adds an "o" to make it read "so". If I hit the tab bar this doesn't happen, but it spaces too much between the next word. Doe anyone have a fix for this problem?

Try this: Check AutoCorrect from E's Tools menu, see if you have a correction of 's' to "so". Either remove that correction, or turn off AutoCorrection ("Replace as you type") altogether. Note the correction list is shared with Word.
