Come on now, you've got to be more specific than that. HOW do you want to change them? Or do you want to switch them in and out? All you have to do is drag an icon either onto the dock or off the dock to add/remove it. Also, when an application that usually isn't in the dock is open, you can right-click on the icon in the dock and click on "Keep in dock". You can also move icons around in the dock by dragging them between each other. The same is true for documents and folders.

Can you ask the question with a bit more detail? What exactly are you trying to change? Are you wanting to add your own non-application icons (folders, documents) to the dock? [just drag them onto the right hand side of the divider and drop them] ... are you wanting to remove the applications that are already there? [just drag them out while the application isn't running] ... are you wanting to add new applications to the dock? [just drag them into the left side of the dock]. Or something else that I can't quite figure out??

I came across this, which seems a marvellously simple way to change the icons of things like folders and documents ... i haven't tried it for programs, although i do know it wouldn't let me change the icon of my applications folder.

I am sure there is a sophisticated method for doing this involving a program called Iconographer.
However, my simple and makeshift method is to simply
1. Open up the picture in Preview
2. Choose "Copy" from the Edit menu
3. Close Preview
4. Select folder you want to make icon for.
5. Press Option-I to do a "Get Info"
6. Press Option-V to paste the photo in the icon box on the upper left-hand side.
This works for me. The only disadvantage lies in the fact that you cannot create uniform sizes for the pictures. I am sure more sophisticated methods will allow you to make every icon the same size and such.

I have created a folder on my dock, changed the icon to a clipart pile of books, and put aliases of all my applications in it (because just having the application folder looks ugly). I know this wasn't exactly what you were asking, but it struck me as quite a fun thing to be able to do. /forums/ubbthreads/images/graemlins/laugh.gif

Ok this is how you do it. First find the icons that you like. Then highlight the icon and do a get info(command i) and click on the picture of the icon in the top corner. Then do a copy(command c). Now select an Application that you want to change the icon of and do a get info on it. Click on the icon in the window and do a command V(paste). This should change the icon of your application. You might have to drag it to the dock for the dock icon to change.
For icons like the Application folder or toolbar icons you have to use a program like CandyBar from Icon Factory.
