I've decided to give Mail another try. I've been using Entourage for the last year or so but am quite sick of it.
I'd like to have three accounts and be able to choose which account to log into at start up and only recieve mail for the account i'm logged into. (like entourage). possible?
This is one of the most confusing email apps i've set up. My business sig is also attached to my personal account and sounds don't change when changed. The "new mail sound" drop down box makes absolutely no sense to me.

Sure. Go to Preferences>Accounts>Advanced, and for those accounts you don't want Mail to log into, uncheck the box that says "Include when automatically checking for new mail."

Which version of Mail are you running? I've never found Mail particularly confusing in either Jag or Panther. Nor, for that matter, is the new mail sound drop-down. Select, click and go. You may need to log out for changes to take effect....not sure about this, however.

I'm using it now and it seems alot quicker than Entourage and i'm happy, but I would like to be able to set my Fiancee up with an account with mail as well.
Is there a way to have it so not all folders are visible for every account?.. I'd prefer not to create a new user for my computer.

why not create a new user? it's easy. and that's the only way (that i know of) that you won't have all your email mixed together in mail.app. i highly recommend multiple users for this kind of thing. that's what it's for! also, panther's fast user switching feature is excellent.
(i'm a big proponent of multiple users. there's an imac at my home that's shared by four very different people, and it's great. it feels like you each have your very own computer!)
