How do I change my default applications?

Hi all,
I cant figure it out. How do I change my default applications for certain functions? More specifically, my default .pdf viewer is Preview, how can I make the default application to be Adobe Acrobat Reader 6.0; the default application used when I plug in my digital camera via USB is iPhoto, how do I change it to be Finder?
I am getting frustrated and can't find much info on support.apple.com. Can anyone tell me how to do what I want to do? As always, any help is much appreciated...

Get Info on a file of the type you want to change. Change the open with application. Click Change all. Tada, you're done!

Mr. d00d sir, you ARE the man!
It worked like a charm. But now for the iPhoto question. When my eMac detects the digital camera, it automatically opens iPhoto. I can't "right-click" anything, so how do I change that default action?

Open /Applications/Image Capture . Open Preferences in it. Click on Camera. Change the application to open when a camera is connected to none.
