AirPort Express really sounds great.
I'm thinking about getting one, but I still have one question:
Can it function as a bridge for an AirPort-less computer?
e.g. Using my already installed AirPort Extreme network, can it receive its signal for then sending it to the computer via an ethernet cable?

Yeah, as long as you turn off the NAT services in Airport Express (much like you can do with an Airport Base Station), it becomes a simple wireless access point. I did that with my Airport Base Station (Graphite version) and a Linksys wired router for a couple years until I bought a full fledged wireless router (with 4 wired ports).

All you do is connect an ethernet cable from your modem (or router) into the WAN jack of the Base Station, and another ethernet cable from your PC into the LAN jack of the Station. You'll get a wireless connection to your wireless devices and also a ground connection to your desktop. I currently do this with my Powerbook and my PC (a Dell).

So dood, I've got a Starmax that I'd like to have connected to our wireless network at home. I've currently got a Graphite Base Station plugged into the Cable modem for our airport-equipped computers. I have an extra Graphite lying around unused. How do I set the extra ABS up to act as a bridge/relay for the Starmax to have access?

Well, you can't really do that. The set up I was using was:
cable modem -> ethernet cable -> wired router -> ethernet cable -> graphite base station
The graphite base stations don't have the ability to connect to another base station wirelessly. They can only add wireless access to an existing wired connection.
