Getting the Apple Gray out -- "Appearance" problem

Am running OS 9.1 on UMAX C600 with Sonnett G3/L2 400 upgrade.
After upgrading to 9.1 a couple of weeks ago, I noticed when clicking on Page Setup or other print functions, that the horrid Apple gray (Platinum) background became much darker, the text boxes still had their white backgrounds, but when opening a Word 98 or Excel document, the background color on those pages had changed to a very annoying light gray color. They were white. Restarting and rebuilding the desktop cures the problem temporarily. A major nuisance. Is there no clever way (i.e. via ResEdit) to rid ourselves of this boring gray background Apple has built into the system? Any suggestions on what's causing my current situation?
