I would like to partition my drive so that I have 2 volumes, one for the OS, apps etc and the other to store data, mp3 etc.
If I were to do this, would the drive storing my data be secure? Would File Vault apply to it or does File Vault only cover the volume comtaining the OS?
Also, how should I format the data drive, should I enable journaling?

PS, I'm using Panther on a G4 800 iBook.

With Panther, I believe you want journaling enabled.
I know that when I did some disk work in terminal on Panther, it warned me that the hard drive was journaled. Since that is default for Panther, I assume Panther likes it /forums/ubbthreads/images/graemlins/wink.gif

FileVault only encrypts your home directory. Everything outside that including your system files and any folders you place outside your home directory are not encrypted. This goes for your other partition as well (it won't be encrypted).
Always enable journaling with any HFS+ partition you are using with Panther. It will lead to better disk directory health by preventing corruption.
As a side note, later versions of Jaguar had the ability to use journaled partitions, but did so in a very inefficient manner, leading to slowdowns. Panther doesn't suffer any such problems.
