Epson CX5400 Settings

I bought this printer with my iMac FP 1.25 several months ago. I've updated to 10.3.5. Somewhere along the line, I deleted the printer settings panel. I can still print, but, would like to find the settings panel and be able to select the number of copies etc. instead of hitting the print button multiple times.
For example, when I'm ready to print a document in Appleworks, I click on the print icon and get one copy, but, seems I used to have a dialog box to choose from until I screwed up somewhere. Anybody help me out here? I would like to have the settings panel pop up each time I hit print.
