Tinny Screechy Audio when Converting to MP3

Hello,
I am trying to make an MP3 version of a WAV file that I recorded using WIRETAP. I imported the WAV file into iTunes, but after I converted the file to MP3, it sounded very tinny and screechy. (The file I'm talking about contains voice only, no music.)
Any ideas why the quality is so bad after conversion?
I've tried recording an MP3 file directly with WIRETAP (thus skipping the conversion step and bypassing iTunes), but oddly enough, doing so gives me the same tinny, screechy result as iTunes (5.0.1) gives me after it converts one of my WAV files to MP3.
In short: I'm able to record the spoken word just fine as WAV files -- but the quality takes a nose-dive whenever I convert said files to MP3 using iTunes 5.0.1.

Add'l info: I'm using an iBook g4. My goal is to upload some mp3 voice files to my Web site, since not all my visitors seem able to access my WAV files. /forums/ubbthreads/images/graemlins/confused.gif
