I'm a newbie, so excuse the ignorance. I just got a G5 and started burning some music CD-R's. They played back fine on the iMac, but my cd-player, dvd-player and car stereo wouldn't even recognise them. It's the first time I had this problem with CD-R's.
I found out that iTunes burns them on the AAC format by default - is that the reason? If so, what's the best format to choose so I can play them on all my other players?

You're probably burning the CDs in MP3 format, not as audio CDs.
Go to preferences in iTunes, Click on "Advanced", then click on "Burning" and select the radio button for "Audio CD". Then you'll be able to listen to the burned CDs on any CD player.

Thanks for the suggestion, but I checked and its already burning as an audio CD. Seems that I'll have to try another format in which to rip the songs from the originals. If anyone has any other ideas, I'd be happy to hear.

it doesn't matter what format you are ripping your music to itunes in (aac, mp3, etc.). if you have "audio cd" checked as your disc format in the "burning" preferences itunes is burning plain old cd audio format (aiff) to the cd. the only suggestion i have is try using a different brand cd-r if your devices have been able to play burned discs in the past.

A lot depends on the ages of the players. The earlier ones
don't know about CD-R. Our cars are fairly new, but the
consumer DVD player we had didn't recognize CD-R. I sold
it, replacing it with a WalMart $80 Philips DVD player. It
says if you can fit it onto the tray, it'll play it. I've
yet to try it with a bagel.
