Optimizing a hard drive under OS X?

What application can I use to optimize and defragment a hard drive?
Also, what program can I use instead of Norton Utilities to recover files, etc. in Panther, as Norton doesn't support Panther and as I've read it wasn't that good either?

You don't. OS X does a fairly good job of doing this on its own. DiskWarrior from Alsoft is worth having in your toolbox because it tweaks directory structures themselves which can eliminate errors and improve access times (by reducing seeks). But don't worry about tradition optimization or defragging.
