if you are running X, launch the application.
the icon will be in your dock when running.
right (option) click...Keep in dock.
or if you want it on desktop, go to your applications folder, click once on the app.
File >> Make Alias.
drag it to your desktop. this works for X or Classic ( OS9 or earlier)

-Ken,
If you are running OSX you can go to HD-->Applications-->click on Excel, etc. and drag it to the Dock. You'll want to place it on the left side of the vertical line. The right side is for documents, folders, etc. but not apps. -Nuke just showed you a different method, and there are a few. If there are any apps in the Dock you don't want...just drag them to the Desktop after 'quitting' and ::poof:: they're gone until you go back to Applications folder, and drag them back into the Dock.

Another quick method for a shortcut on your desktop is to click once on the application icon, hold down the Apple and Option keys at the same time and drag the icon to the desktop. Instant alias.
