I have the 5gb iPod and since I upgraded the os version my battery seems to die if I don't keep it powered. For example I left my iPod unplugged over the weekend and today I tried to turn it on and the battery has died.
Has anyone else noticed a problem with the battery draining just over a wknd.?

This seems to be a known issue.
If you know that you do not use, or plan not to use alarms, turn them off. Do so in the settings on the iPod itself. You can also force reset the iPod after a sync (pressing menu and play at the same time for a couple of seconds) to reset the clock to 12:00. Once this is done the clock does not run and no power will be consumed by it.
You should not force restet it after you played things because it will reset the times you have played things and they will not be reflected in the playcounts. After you reset it, everything will continue to work normally, including play counts.

From what I know Apple knows about this and is working on a software update to fix it, or at least give better mileage.

It happened to me few times as well.
I remember charging my ipod and not using it for 2 days and discovering dead battery. Lately however everything is OK, i charged the battery 5 days ago and no problems.

what vers. of iPod are you using? 1.2 drains fast b/c the battery monitor doesn't work right. Try upgrading to 1.2.2.
