will a working ATA drive show up in system profiler on a Power Mac G4 if the jumpers on the drive are in the wrong position? Also, which of the two available connectors on the ribbon cable need to be connected to the drive-the middle one or the last one? thanks!

Typically NO, it wont show up unless jumpered correctly. With a single drive, it should be set as master. If more than one drive is installed, the main boot drive should be set as master, and the other as a slave.
As for the cable, if the drive is the only one installed, it is normally connected to last connector on the cable, but IIRC it really doesn't matter, as long as the jumpers are correct.

For powermacs, just set all drive jumpers to "cable select" and you don't need to worry about the whole "slave" versus "master" configuration. The recommended default jumper settings for internal drives since the G3 powermacs has been "cable Select", but you'll need a jumper diagram for your particular drive. Just google the model number and you should be able to link to one.
