You forgot to mention that adding a track number in the info section of the track and album info box will also force the songs to always play in that order.

Also, make sure that "shuffle" (the crossed arrow icon) isn't on in your iTunes library or whatever playlist you have the CD stored.
For classical CDs that I've ripped to iTunes, I usually join the related tracks -- it makes for a longer piece, but it keeps the related pieces together. Just click the tracks you want to join together, then go to Advanced->Join CD Tracks in the iTunes menu. (That way I don't interrupt my Brandenberg Concerto with Led Zeppelin...)

Ah - the help file says you can only do this before you rip the CD. I'll keep that in mind...

Also, you can use one of the mp3 utility programs to join tracks after the ripping.
The program I use for trimming and joining mp3 tracks is "MP3 Trimmer" -- registered and have been using it successfully for about two or so years.
