iTunes to quick time

By default iTunes opens all mp3 files, but it also adds them to my libary. I dont want everything automatically added to my libary, so is there a way to make QuickTime player the Default App to open mp3 files?
Here is what I have tried:
Control click on an mp3 file and choose open with > other
then select Quicktime player and select the always open with checkbox
but it still opens them in iTunes
any ideas?
(FYI itunes 6.0.4, Quicktime 7.0.4 Pro, OS X 10.4.5

Control click on a mp3 file, choose get info.
In the info window "open with" section select QuickTime
then click change all.
