Definitely check out all that Laurie ( Cube Owner ) has to offer.
To answer your question, an nVidia GeForce 3 was the best one could install without needing to mod or buy the PowerLogix PowerCube case. Of course, if you are able to find the Mac GF3, you'll be spending a lot of $$$ on it, precisely that many Cube owners have snatched them up.
