Open System Preferences->International, select Language, you'll find a list of languages, check the ones you want to use, e.g., U.S. English, Chinese. Click OK. They will now appear in the Languages window. Then select Input Menu and check U.S. and Traditional Chinese (you may check all the types of Chinese). You might also want to check Keyboard Viewer and Character Pallette. Check "Show input menu in menu bar." Close International. You will now see an American Flag in the Menu Bar (if you checked U.S.). Click on the flag for the drop down menu. Depending on which Chinese system you select, start typing (e.g., in Pinyin type the sound and you'll see a list of characters with that sound and tone for you to select. When you select a system, the flag will be replaced by the character, click on the character and a drop down will appear. You can select Tranditional Chinese Input Method Help for additional information. You can also set up your preferences from this menu. Cmd-space toggles between the last two languages you selected. BTW, another option is Simplified Chinese
