I only have apps in my dock that I use regularly. They are: Finder,Mail,iCal,Address Book, VueScaN, Aperture, Pages, Photoshop, iPhoto, Goolgle Earth, iTunes, OmniDazzel, Stickies and finally Trash. Although I have Office 2004 I only use Excel. As these apps rarely require a new document, I have a link to the most used documents on my desk top. This fills the requirements for 99% of my work. I also have downloaded "TODOS" (not ToDoes) which gives a display of all applications on my computer in logo form. This, as well as being entertaining in seeing what apps are on the computer, allows you to start an app with a new document or do other things such as Digital Color Meter or Activity Monitor.
As an aside, I have migrated from a PC last April when I purchased a MacBook Pro. The only PC-centric application I still use is Excel. Once I got used to Safari, Mail, and iCal (so much easier to use than Outlook!) I have never looked back. Address Book is great and, in spite of what many say, it IS possible to start an e-mail from the Address Book.

The Dock is simply dreadful. I don't know what's in my Dock. It's pinned to the top, end and set to auto hide. I hate it. Thankfully, I hardly ever see it. I exclusively use DragThing, positioned at the bottom of my second monitor. I can have hundreds of items stored there, nicely organized in tabbed sections. I don't need a 20 foot wide (or tall) Dock to manage that.

I do not know what is in my dock and I dont care. It is hidden somewhere behind menubar and I never touch it.
I launch apps from classic menu and thats it. App switching by command-tab.

I have: finder, terminal, dashboard, system preferences, safari, firefox, one-click answers, xjournal, itunes, limewire, quicktime pro, iphoto, imovie, idvd, garage band, iweb, ical, photo booth, mail, address book, word, excel, powerpoint, entourage, isync, microsoft messenger, skype, ichat av, yahoo messenger, stickies, hp device manager, hp photosmart studio and then a folder with: analyseries, calculator, dictionary, iphoto browser, iphoto buddy, osx geocalc, plot and stuffit expander.
Yeah, I know.

Same here... although I also use LaunchBar for drag and drop - as I'd better as I was the one who suggested (and partially implemented) the feature :-). Anyway, here's my dock.
From top to bottom, Finder, LaunchBar (duh), AntiRSI, Drop Drawers (which I hardly use any more and need to migrate away from), MkConsole, Kerberos, XTension, x2web, iTunes, SyncTunes, Palm Desktop, Pester, BBEdit 6.5.3 (I own a newer one, but can't use my favorite font with it), iChat, NetNewsWire, Safari (backup browser), Camino (primary browser), Terminal, X11, Emacs and Preview.
On the other side are some minimized windows - one for OpenVPN, one for my long-running Gmail import project, one as a control window for my rootless NX session, and the last one is my email, which I primarily read in Mutt (and believe me, I'd love to switch to a real Mac app but none of them annoy me insufficiently.)

Left to Right:
Finder, System Preferences, Safari, Mail, iTunes, TextEdit, Word, Epson Scan, Flash 8, iPhoto, ComicLife Deluxe, iWeb, Stickies, Photo Booth, Calculator. After the divider comes whatever comic I happen to be working on (a ComicLife file), the folder for all the files related to that comic (pictures, Flash files, notes, etc.), my hard drive, and then the Trash.

My dock isn't very crowded, and I am a sucker for the magnification :-P.

My Dock at home: Mail, Safari, OmniWeb, iTunes, Terminal, Xcode, Transmit, BBEdit, Permanent Eraser, OmniOutliner, Quicksilver (and SpamSieve when Mail is open).
My Dock at work: Mail, Safari, Adium, Remote Desktop Connection, Terminal, MacJournal, OmniWeb, and QuickSilver.

i keep ichat just in case a buddy is using aim and wants to send a file.
i keep safari just in case firefox decides to be buggy. but since i got 2.0 debugged, it's been fine. i would would use safari if it had as good a ad blocker and something similar to the noscript extension.
hp image zone so i can easily access my printer/scanner/copier thingy to scan things.

I completely agree with the earlier comment about why anyone with a widescreen display would keep their dock on the bottom of the screen. Further, I don't understand why anyone would want a widescreen display unless the only thing they use their computer for is watching DVDs, and I have a DVD player and TV set for that. I use my computer for things like web surfing and document editing, which take up more vertical than horizontal space. This switch to widescreens seems totally counter productive.
Anyway, my dock is simple, too: Finder, Safari, Mail, iTunes, Image Tricks, and Preview. Image Tricks is what I use to edit pictures; I don't care for iPhoto. To launch other apps, I use HimmelBar.
