I think the Billy Crystal clip is When Harry Met Sally. Clip 1 does look like a Hitchcock movie; I wanted to say Dial M for Murder, but it was shot in color. Psycho perhaps? My guess on the Travolta clip, given his snazzy suit, is probably A Civil Action (his hair matches too). I think the Cameron Diaz clip is from one of the Charlie's Angels movies. And given De Niro's age and general look, my guess for him is Hide and Seek.
Those are the ones I'll guess at. Maybe Apple'll release a complete list.

Actually, I think not. "It Happened One Night" is much too early in Gable's career--the look he's sporting is definitely post-"Wind." My guess is "The Hucksters," though it's been a long time since I've seen it.

Also notice that the phone's wall paper is two clown fish ala "Finding Nemo", and that the name on the top of the iPhone's display is John Appleseed. There is a new movie in pre-production, "John Chapman, The Legend of Johnny Appleseed".
